CUT COMB HONEY is produced locally during two main nectar flows of the summer season.

The lime tree (Tilia) flowers during July. This is a light coloured and delicately flavoured honey that eventually sets in the comb.

The heather (Calluna or Ling) moors blossom in August. Heather honey is the gourmet and connoiseur's choice. We don't move our colonies to the heather blossom until it predominates over the earlier flowering heaths. In this way we avoid heath nectar which can make the honey too bitter for some gourmet palates. Heather honey is medium amber colour, full flavour and carries the beautiful scent of the summer heather in full bloom.
